According to a USDA Summary in 2006 California is 2nd in cheese production with a 23.1% share, just behind Wisconsin.

California cheese, milk, butter, yogurt and ice cream are among the many delicious healthy food products distributed across the globe. These products offer many health benefits, and are also rich in Vitamins A, D, E, and K, to name some. According to US Dairy Export Council, dairy exports jumped 62 percent in value to $3.06 billion on overseas sales of 2.19 billion pounds of United States' milk solids. The 2007 annual report of the US Dairy Export Council describes selling milk powder, cheese, whey, butter and other products to foreign markets has become a mainstay of the U.S. dairy industry.
